Bread. Cheese. Wine. Beer. Coffee. Chocolate. Most people consume fermented foods and drinks every day. For thousands of years, humans have enjoyed the distinctive flavors and nutrition resulting from the transformative power of microscopic bacteria and fungi. Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods is the first cookbook to widely explore the culinary magic of fermentation.

"Fermentation has been an important journey of discovery for me," writes author Sandor Ellix Katz. "I invite you to join me along this effervescent path, well trodden for thousands of years yet largely forgotten in our time and place, bypassed by the superhighway of industrial food production."

The flavors of fermentation are compelling and complex, quite literally alive. This book takes readers on a whirlwind trip through the wide world of fermentation, providing readers with basic and delicious recipes-some familiar, others exotic-that are easy to make at home.

The book covers vegetable ferments such as sauerkraut, kimchi, and sour pickles; bean ferments including miso, tempeh, dosas, and idli; dairy ferments including yogurt, kefir, and basic cheesemaking (as well as vegan alternatives); sourdough bread-making; other grain fermentations from Cherokee, African, Japanese, and Russian traditions; extremely simple wine- and beer-making (as well as cider-, mead-, and champagne-making) techniques; and vinegar-making. With nearly 100 recipes, this is the most comprehensive and wide-ranging fermentation cookbook ever published.

"A nostalgic journey... this is a book that will fascinate and inspire food lovers."--Saul Zabar, owner of Zabar's, New York City's Most famous food market

"Sandor Katz has labored mightily to deliver this opus magnum to a population hungry for a reconnection to real food."--Sally Fallon, author of Nourishing Traditions

Booklist-
Fermentation is one of the earliest natural processes involving food and its preservation that humans sought to control. The earliest puffed-up breads, wines, and cheeses likely occurred by chance, and results were scarcely uniform or predictable. Disconcerted by off-flavors and spoilage in beer, wine, and baked goods, early peoples learned to control microorganisms whose existence would not be demonstrated for centuries. But in that process of control, people lost some of the benefits of wild fermentation. Sandor Ellix Katz has experimented with Wild Fermentation, and his book explains to others how to take advantage of natural fermentation processes to produce bread, yogurt, cheese, beer, wine, miso, sauerkraut, kimchi, and other fermented foods. A gold mine for science-fair projects, Katz's work presents properly supervised young people ample opportunity to explore both the science and the art of fermented foods (alcoholic beverages excepted).

The Art of Fermentation

The Art of Fermentation

By Sandor Ellix Katz

Winner of the 2013 James Beard Foundation Book Award for Reference and Scholarship, and a New York Times bestseller, The Art of Fermentation is the most comprehensive guide to do-it-yourself home fermentation ever published. Sandor Katz presents the concepts and processes behind fermentation in ways that are simple enough to guide a reader through their first experience making sauerkraut or yogurt, and in-depth enough to provide greater understanding and insight for experienced practitioners.

While Katz expertly contextualizes fermentation in terms of biological and cultural evolution, health and nutrition, and even economics, this is primarily a compendium of practical information—how the processes work; parameters for safety; techniques for effective preservation; troubleshooting; and more.

With two-color illustrations and extended resources, this book provides essential wisdom for cooks, homesteaders, farmers, gleaners, foragers, and food lovers of any kind who want to develop a deeper understanding and appreciation for arguably the oldest form of food preservation, and part of the roots of culture itself.

Readers will find detailed information on fermenting vegetables; sugars into alcohol (meads, wines, and ciders); sour tonic beverages; milk; grains and starchy tubers; beers (and other grain-based alcoholic beverages); beans; seeds; nuts; fish; meat; and eggs, as well as growing mold cultures, using fermentation in agriculture, art, and energy production, and considerations for commercial enterprises. Sandor Katz has introduced what will undoubtedly remain a classic in food literature, and is the first—and only—of its kind.

The Organic Farmer's Business Handbook & Business Advice for Organic Farmers with Richard Wiswall (Book & DVD Bundle)

By Richard Wiswall

Contrary to popular belief, a good living can be made on an organic farm. What's required is farming smarter, not harder.

In this book and DVD set longtime farmer Richard Wiswall shares his story, and offers detailed advice on how to make your farm production more efficient, better manage your employees and finances, and turn a profit.

From his twenty-seven years of experience at Cate Farm in Vermont, Wiswall knows firsthand the joys of starting and operating an organic farm—as well as the challenges of making a living from one. Farming offers fundamental satisfaction from producing food, working outdoors, being one's own boss, and working intimately with nature. But, unfortunately, many farmers avoid learning about the business end of farming, and because of this, they often work harder than they need to, or quit farming altogether because of frustrating—and often avoidable—losses.

The DVD consists of a filmed workshop and interview, recorded at the Northeast Organic Farming Association (NOFA) Winter Conference in 2010 and at Wiswall's Cate Farm. This workshop offers invaluable exercises for business-savvy farmers, including information on the costs of running a farm, office and bookkeeping management, creating a budget and crop enterprise plan, and getting down the the nuts and bolts of business management, that's easy to understand. Through in-the-classroom footage and step-by-step guidance to "sharpening the pencil", as well as footage of Wiswall's fields, greenhouse, and barn, viewers will leave this "workshop" knowing how to achieve true profit, that will last for years to come. Also included is a bonus disc with downloadable spreadsheets for creating your own budget, marketing, profit and loss statement, balance sheet, and cash flow.

Wiswall's book, The Organic Farmer's Business Handbook (Chelsea Green, 2009), offers more on all of this information, as well as a comprehensive business kit including:

  •     Step-by-step procedures to make your crop production more efficient
  •     Advice on managing employees, farm operations, and office systems
  •     Novel marketing strategies
  •     What to do with your profits: business spending, investing, and planning for retirement

A companion CD in the book also offers valuable business tools, including easy-to-use spreadsheets for projecting cash flow, a payroll calculator, comprehensive crop budgets for forty different crops, and tax planners.

The Lost Tapes of Ian Mcharg

The Lost Tapes of Ian Mcharg

By Ian McHarg

Experience the wisdom of this life-long environmental activist as he clarifies his vision with unprecendented articulateness, brutal honesty, and humor in his own booming voice.

Attention ecologists, environmentalists, and the intellectually curious: we now have available the immortal voice of the legendary landscape architect, Ian McHarg. A self-styled “crypto-pseudo-quasi-scientist,” McHarg presents in his inimitable Scots accent his unique theory of energy and matter processes inclusive of “human needs and desires” in a finite universe. Listen as he discusses the interdisciplinary theory that astonished good scientists including the director of Brookhaven National laboratory. A gift to future generations, this CD, made from rare tapes lost until now, presents McHarg waxing profound on a thermodynamic definition of creativity as matter and energy raised to higher levels of order; evolution both physical and biological (plants, animals, and microorganisms) in the context of nature; and the criteria and attributes of the creative process (e.g., does a given region move from randomness to dynamic equilibrium, or is it retrogressive and therefore heading toward pathology?). McHarg argues that L. J. Henderson’s concept of “fitness of the environment,” although nearly unknown, is as important as Sir Charles Darwin’s idea of “fitness of the organism.”
